March Madness

Whew, life is still a whirlwind! The term 'March Madness' is not just a basketball tournament in the lives of Meg and Greg.

But let me fill you in. COOL STUFF!

1. I am co-directing our UIL One-Act Play. Zone competition is next Tuesday! We're doing Orpheus Descending by Tennessee Williams. No small feat. In fact, this show is incredibly difficult. I really feel that it has been rewarding for all of us, though. It has been quite difficult for me to go straight into another rehearsal process right after I closed Big Love. Not really much of a break for me at all. Spring Break wasn't a break, either - more rehearsal time! However, I love my job and I want to do anything to help out the UIL Play. Here's a promotional pic:



2. Greg is a Baylor fanatic. I've noticed that Baylor grads are pretty snobby about their education (well, it is a private Baptist University). I totally have room to say this because I am married to a Baylor Grad. Haha! All in good fun! Greg likes to joke around that Baylor is "God's University" and that he would like to be buried by Baylor so he could "watch sports games." I never thought of Baylor as a successful sports school, so that shows you some collegiate loyalty. He always has been a huge fan. I like that, despite the jokingly snobby comments. And guess what?! Baylor is doing remarkably well in the NCAA tournament! They will be in Houston tomorrow playing in the Sweet Sixteen Championship! I have a feeling this will be a fun weekend. I'll even be a Baylor wannabe and wear my Baylor shirt. Should I pair it with pearls and an expensive handbag to complete the snob ensemble? I THINK SO!

3. Only two more months until summer!!!!

Farmer's Market

So, the weather is absolutely gorgeous! The sun is shining, it's breezy, and it is 70 degrees out! I'm wearing shorts, and flip flops! Thank goodness! I was really getting tired of the dreary and cold weather we've been having. It's actually been an unusually cold winter in Houston and we both have hated it.

My hubby had the best idea ever - check out a farmer's market today! It was very nice. It was over by the water in Clear Lake Shores. Lots of pastries/breads, meats, jellies, and of course produce. Not that much produce, probably because it's been cold and it's early in the season. We picked up some lovely tomatoes, strawberries, and a red bell pepper. Yum!

Amazing

One of the things I love to do when I'm bored is watch people sing on You Tube. I know that sounds a little strange, but it can be pretty inspiring and it's really fun to see what kind of incredible talent you can find at your fingertips. There's a specific girl I absolutely adore. Her name is Natalie Weiss. She's pretty famous on You Tube, and is also a professional actress/singer. Every video I've seen of her singing has been simply amazing. I seriously don't know how she does it. Here's one of her videos - her most viewed.

Apple Cake Recipe

I found this awesome Apple Cake recipe on weightwatchers.com that I had to share!

I love to cook, I love food, but baking hasn't been one of my strengths. With that being said, this came out perfect! The thing I liked about it is that it isn't too sweet (it only has 1/2 cup of sugar in the whole cake), it has cinnamon (my favorite spice), it's only 3 points, and it is easy to make! If you like a suuuuuuper sweet dessert, this isn't for you. But I like how it's fluffy and apple-y.

Here's the recipe.



Ingredients:

1 spray(s) cooking spray   

2 large egg(s)   
1/2 cup(s) sugar   

1/4 cup(s) fat-free skim milk   
2 Tbsp light butter, melted   
1 Tbsp vanilla extract   
1 cup(s) white self-rising flour, sifted   
1 1/2 Tbsp cornstarch   

1 large apple(s), green, peeled, cored and thinly sliced   
1 tsp ground cinnamon   
1 tsp sugar  


Instructions:

Preheat oven to 400ºF. Coat an 8-inch round cake pan with cooking spray.

Beat eggs and 1/2 cup of sugar in a large bowl with an electric mixer until light and fluffy. Stir in milk, melted butter and vanilla extract.

Combine flour and cornstarch and fold into the cake batter. Pour mixture into prepared pan.

Layer apple slices in a circular pattern on top of cake. Combine cinnamon and sugar in a cup and sprinkle over apples. Bake for about 30 to 35 minutes or until a knife or metal skewer comes out clean when inserted. Cut into 8 pieces and serve.


My notes: I used Egg Beaters instead of eggs, Smart Balance instead of "light butter" and on top, I sprinkled Splenda with the cinnamon. Came out great!

I'm trying to incorporate leggings into my wardrobe...
