So, I immediately pulled out my iPhone and got on my Epicurious app and found a recipe that had 95% positive reviews. It was so simple looking - it was too good to be true.
And it came out amazing, if I don't say so myself.
Here's my pie. And the recipe.
O. My Gosh This is Great Key Lime Pie
recipe via Epicurious
Ingredients:
For crust1 1/4 cups graham cracker crumbs from 9 (2 1/4-inch by 4 3/4-inch) crackers
2 tablespoons sugar
5 tablespoons unsalted butter, melted
For filling
1 (14-ounce) can sweetened condensed milk
4 large egg yolks
1/2 cup plus 2 tablespoons fresh or bottled Key lime juice
For topping
3/4 cup chilled heavy cream
Preparation Instructions:
Make crust:
Preheat oven to 350°F. Stir together graham cracker crumbs, sugar, and butter
in a bowl with a fork until combined well, then press mixture evenly
onto bottom and up side of a 9-inch (4-cup) glass pie plate. Bake crust in middle of oven 10 minutes and cool in pie plate on a rack. Leave oven on.
Make filling and bake pie:
Make filling and bake pie:
Whisk together condensed milk and yolks in a bowl until
combined well. Add juice and whisk until combined well (mixture will
thicken slightly). Pour filling into crust and bake in middle of oven 15
minutes. Cool pie completely on rack (filling will set as it cools),
then chill, covered, at least 8 hours.
Make topping:
Make topping:
Just before serving, beat cream in a bowl with an
electric mixer until it just holds stiff peaks. Serve pie topped with
cream.
O.'s Notes:
- I didn't make whipped cream, just because I had a can of the spray whipped cream in the fridge. Otherwise, I would have (and probably would have added vanilla and a pinch of sugar to the heavy cream). I did, however, zest some of the limes over the top of the whipped cream for presentation and a little extra zing.
- A lot of the reviews on this recipe say to increase the filling ingredients by half, but I didn't. I felt like the filling was enough to fill my 9-inch pie dish.
- The homemade crust literally fell apart on me in places. But it was sooooo good to pick at the crumbs and eat them. I'm not sure what to do to make a more solid crust, but I don't want to alter it too much. Suggestions welcome.
- My mom and sister kept saying, "Oh my gosh... mmmm!!!" while eating this, so I think it was a hit. And that's why I'm calling it "O. My Gosh This is Great Key Lime Pie."
Did you make anything over the weekend that was "oh my gosh" worthy?

| These are all the key limes I squeezed. I wanted key lime pie from key limes, not a bottle of juice. I'm hardcore and squeezed them all. It was so worth it. |

| Right after the pie came out of the oven. I may or may not have stuck my finger in it. |

I don't really like key lime pie...but I have a certain husband who does. I'll definitely have to try this! I really do trust your recipes; your dump cake has never steered me wrong :)
Yum! I love the tartness of key lime pie. :)
Yum!
Holy yum!! key lime pie is so frikkin amahzing. i can't believe you bought all those key limes, but good for you for doing it with FRESH ingredients!
as for the crust, i'd try adding another tablespoon of melted butter. that'd be my guess as to why it was more crumbly than you wanted.

Key Lime Pie is my most favorite dessert ever. I've been on a baking spree here around the house....this will be on my list of things to make!!!!
Your pregnant brain has good taste!!!! LOL!
Yum yum yum yum yum yum yum. Key lime pie is my favorite! [the episode of Dexter where he's on the hunt for the perfect piece of key lime pie made me drool...even though it was overall a very sad episode.] I will be making this very soon, I feel.
It looks incredible!!! I love key lime pie!
Key lime pie is one of my favorite things, and this one looks DELICIOUS!! :)
YUM! I looove key lime pie. I wanna make it!
Please make this, and send it to me. Thank you!!! ;-)
I love my Epicurious app. I use it all the time, and I have excellent results, especially with the reviews.
Agreed with the comment on adding the extra butter to make the crust stick, but add a tablespoon of flour, too.
Wow, you ARE hardcore!! I can't believe you squeezed all of those limes! I would have just bought the frozen stuff at the store :-)
Oh Yummy!!! Limes must be a LOT cheaper there than they are here, we pay a small fortune for them.
Yum, I love the sweet-tang of a key lime. Since they're hard to find all year round (and impossible to find here in Australia), you can get almost an exact taste match by combining half lemon, half lime juice. It also cuts the cost! I made some mini key lime tartlets for my Mr's birthday, and couldn't tell the difference :)
Looks AHMAZING!
maybe i'm pregnant...i'm the same way! haha.
and that looks AH-MAZINGGGGG!
you make everything look so easy...! :) I'll have to try this out some time!! xx
Woah - so many limes! Sometimes putting the extra effort in makes a pie, you know? Good job hey, looks really tasty :)
That looks and sounds delicious...definitely something that gets my baking brain in gear! Thanks for sharing! :-)
Not a fan of key lime, but LOVE your pics of the limes.
I prefer to get my limes via ritas! :)
Oh Yum! This looks awesome and delicious! I am visiting from the hop! I am your newest follower and would love it if you would follow me back! thanks so much!

Looks amazing! The finacé LOVES key lime pie, which I make for him every once and a while.. but I have to admit that I just use lime juice :( Cause I'm lazy. But you've convinced me.. I'll try the real deal next time!
Oh my goodness. It's one in the morning, and I should be going to bed, but instead I'm looking at your delicious food and my stomach is grumbling - because, well, there's NOTHING better than pie - it's totally one of my favorite, favorite foods! I (surprisingly!) have all the ingredients for this, and will totally be making it in the morning!
