Special Occasion Egg Casserole

Do you have a special recipe you like to prepare for special occasions? Greg's family is very into making this lovely egg casserole for holidays, special get-togethers, and any other reason to make it! Typically the men in the family are in charge of making the casserole. I wanted to post the recipe in case you have a special occasion coming up where you will want to prepare this for breakfast! We made it this past Thanksgiving morning and I'm sure we'll be having it on Christmas morning!

The O. Family Special Occasion Egg Casserole

Ingredients:
6 eggs, slightly beaten
8 slices bread, cubed
1 lb. or 12 oz. package of breakfast sausage, cooked
1 tsp dry mustard
1 tsp salt
½ tsp black pepper
8 oz. shredded cheddar cheese
2 cups milk

Preparation Instructions:
Combine all ingredients in a large bowl and let sit for 12 hours or overnight in the refrigerator. Bake in a shallow casserole dish at 350 degrees for 45-50 minutes.

Notes:
You can make a healthy version of this by using turkey/light breakfast sausage, 3 eggs plus 3 egg beaters, and low fat cheese.  We do this a lot of the time.

Do you have a special breakfast you always eat on special occasions?

I've been hunting for a good egg casserole. This looks manageable for my lack of cooking abilities :)

I pretty much use this exact same recipe when I make my breakfast casseroles! It is so yummy. Sometimes I will make one on Sunday night and my husband and I will eat it for breakfast every day during the week :)

Allen's Mom makes this casserole and it's become a favorite of mine. Anytime someone stays at our house I try to have this ready to put in the oven the next morning.
Love it!

We make a similar casserole for Christmas morning every year but not usually at any other time. That looks good... and makes me ready for Christmas morning!
