This easy strawberry banana icebox cake recipe is a winner! It is made with only a few ingredients, is the perfect recipe for Easter, spring, and summer, and everyone in the family will love it.

Ingredients

  • 1 box of NILLA Wafers
  • 1 16 oz. package of fresh strawberries, sliced
  • 4 bananas, sliced
  • 8 oz. package of mascarpone cheese
  • 2 cups of heavy whipping cream
  • 1 teaspoon of vanilla extract
  • 1/2 cup plus 2 tablespoons of powdered sugar

Instructions

  1. Slice the strawberries and place in a bowl. Place the 2 tablespoons of powdered sugar into the strawberries and mix to sweeten the strawberries, set aside.
  2. Slice the bananas and place in a bowl, set aside.
  3. Use a mixer and whip the heavy whipping cream until stiff peaks form.
  4. Add the mascarpone, vanilla extract, and 1/2 cup of powdered sugar to the whipped cream. Mix until well blended.
  5. Grab an 11x7 baking dish and place a layer of NILLA Wafers across the bottom of the dish.
  6. Top with 1/4 of the whipped cream mixture, then a layer of the fruit.
  7. Repeat with two more layers (NILLA wafers, cream, fruit), finishing with a layer of the cream and fruit. Cover with plastic wrap or aluminum foil and refrigerate for several hours or overnight. Serve and enjoy!
