When October rolls around, I reluctantly embrace all things pumpkin. While the weather may feel like it’s summer, at least it’s not 100 degrees! That calls for a celebration in itself.
Now that it’s socially okay to be all about the pumpkin, it’s time to start making fun treats. I love having Kennedy help me in the kitchen, so anything easy and kid-friendly is a must! We recently made this easy pumpkin cheesecake dip and paired it with our favorite Horizon Organic Snack Grahams – it was a hit in this house for sure. I may or may not have just eaten it straight from the bowl… (In my defense, it tastes just like pumpkin cheesecake and I am weak.)
It’s a super simple recipe that can be a mommy-kid activity with minimal mess. Throw everything in a bowl, whisk it together, and dip your favorite snack grahams in it? I’m all about that life.
- 1 8 oz. package of cream cheese, softened
- 1 cup powdered sugar
- 1 15 oz. canned pumpkin
- 1 Tbsp. cinnamon
- 1 Tbsp. pumpkin pie spice
- Whisk together the powdered sugar and cream cheese until combined. (Add more powdered sugar if you like it sweeter. I like it less sweet, so I stick with 1 cup.) Add the canned pumpkin and spices, and whisk together until all combined. Done and done!
Of course Kennedy couldn’t wait to dip into that bowl! She’s a good little taste tester. And, because those Horizon Snack Grahams are made with organic whole wheat, I feel it balances out the dessert dip. Right? It does. Go with it!
I can’t wait to make more fun and simple recipes with Kennedy this fall and holiday season. She’s at such a helpful age, and it’s so important for me to get her in the kitchen and developing an appreciation for fantastic food.
